Lag phase

The lag phase is characterized by slow cell growth after the inoculation of the growth medium. Cells are adapting to the new environment and synthesizing new cell material during this phase. Cell division is minimal.

In production fermentation, it is important to use an inoculum that is in the exponential phase, to decrease the length of the lag phase.
