pH influence on growth

The pH, which is the measure of the acidity or alkalinity of an environment also significantly affects microorganism’s cell growth. Every microorganism has an optimal pH. The optimal pH for most fungi (including yeast) is slightly acidic. The pH affects enzyme and protein stability and can cause enzyme denaturation and interfere with membrane ion pumping.
