Pigment extraction methods

To ensure extraction of intact pigments, these should be handled carefully. Carotenoids, for example, are sensitive to light, heat, oxygen, acids and alkaline bases.

Several methods can be used, but the easiest way to extract pigments is by centrifugation. Weight should always be equally distributed around the rotor, to make sure that the centrifuge is balanced!
